Skinny Bacon Cheddar Broccoli Salad

You’ve all made a trip to the salad bar, only to find yourself loading up on the pre-made salads that are loaded with dressing and sugar. One of my favorites is Broccoli Salad. I wanted to come up with a healthier alternative, that still was full of fun textures and great flavor.

This salad is quick and easy to make and perfect as a side dish at a BBQ or while watching a Sunday afternoon football game. There’s a lot of creaminess to it without it being loaded down with dressing. It feels indulgent, while still being packed with raw fruit and veggies. It’s low-carb and low in sugar.

Variations & Tips:

  • For an even lighter variation you could swap the mayonnaise for plain greek yogurt.

  • For an even bigger flavor profile you could swap the cheddar for a more robust flavor cheese like blue cheese or feta.

  • To make this a meal serve with a 4oz chicken filet. Or toss in some precooked chicken right to the mix for an amazing lunch on the go.

  • The Panera Dressing is probably the oddest ingredient. I found mine in the refrigerated part of the produce section alongside other dressings. Be sure the kind you get is the 25 calorie per serving version.

Skinny Bacon Cheddar Broccoli Salad

Prep Time: 10 minutes | Cook Time: 0 minutes

Yields: 6 Servings | Calories: 138

Ingredients:

  • 3 Cups Raw Chopped Broccoli (approx. 2 heads)

  • ½ Cup Grapes, Halved

  • 2 Tablespoons Bacon Pieces (found in salad toppings)

  • 2 Tablespoons Walnuts, Chopped

  • ¼ Cup Cheddar Cheese, Shredded

  • ⅓ Cup Panera Bread PoppySeed Dressing

  • ¼ Cup Real Mayonnaise

Directions:

  1. Chop broccoli into bite sized pieces, typically smaller than you would if you were cooking broccoli.

  2. Slice grapes in half.

  3. Combine all ingredients in a bowl and stir until well mixed.

  4. Best if served chilled.
